Every year, a couple girlfriends and myself get together for a cookie day. It’s a glorious day filled with champagne, cookie making/baking/decorating and apron wearing. When all the cookies are completed, we do a little exchange and leave with a great variety of cookies to take home and share with family and other friends. These make great gifts, alongside a mug and yummy coffee or hot cocoa mix. In order to get the most out of this year’s cookie day, we have all decided that making our dough ahead of time would be most efficient. Now, we will have ample time to decorate our sugar cookies and sip champagne. Tonight, I’m whipping up some Lemon Pecan Shortbread, and I’m using this recipe.

Mixing your freezer dough in advance is the only way to go! Between the two of us, my mom and I are making: my great-grandma’s gingersnaps, sea salt snickerdoodles stuffed with caramel, butter cookies, lemon white chocolate bar cookies and Grandma’s famous fudge (2 batches, 1 plain and 1 peppermint!) – and Chex Mix, of course!

Also, do a test run with your batter! Megan had a delish batter, but when it baked it juts melted into a ‘bar’:) I don’t think that type of batter was happy with the fridge process. Some need to be mixed morning of. Super fun day!!
